Cornmeal Pancakes

The original recipe comes from one of my favourite little cookbooks called “Pancakes & Hotcakes” [amazon.co.jp] - but modified as I find the recipes a bit dense for my liking. You can make any size you like but I favour using a blini pan or a silver dollar pan like my awesome pan: This recipe makes just about 14 silver dollar sized pancakes. Ingredients 120g plain flour60g cornmeal/polenta2 teaspoons baking powder1 tablespoon sugarhalf a teaspoon salt1 egg160-170ml milk2 tablespoons butterMethod If you are making by hand then in a bowl crack and whisk the egg a bit, add the milk and whisk a bit and melt the butter before adding and whisking a bit. Throw in the dry ingredients and mix. Fry until golden on the outside and not raw in the middle. If you are making with a food processor then chuck it all in together - without melting the butter. The whirring will soften and mix it in. Tip: Don’t skip the sugar even though these are savoury, they aren’t sweet. Serving Suggestions! ​Cornmeal chibi pancakes, poached egg, light lime hollandaise sauce & mango chili chicken sausage. Oh and fresh coriander. Cornmeal mini pancakes, baked asparagus, poached egg and smoked salmon. Sauce is a lemon, dill and onion bechamel. Mini Cornmeal Pancakes & Poached Egg with oven baked mini sausages and Hollandaise sauce as light as I could make it.
